Every week we roast small batches of five kilos. We check every batch ourselves and close every bag by hand.

The place

Eight centuries of craft, and now coffee

The Commanderie van Sint Jan is not an industrial estate and not an anonymous warehouse. It was founded in 1196 as a guest house for pilgrims and the sick.

  • 1196Count Alardus and his wife Uda found the guest house on the Franseplaats.
  • 1495Beer is brewed in the same building for the first time.
  • 2015Ilfa starts Holy Beans and has roasted every batch herself ever since.

Five crafts share the building: beer, coffee, chocolate, mustard and vinegar. You walk past the brewing kettles and the coffee roaster in one building, and you can taste everything where it is made.

The origin

Three roasts, three moments

Not twenty coffees to choose from, but three we work on all year round.

Colombia, Cross Country. Arabica Caturra, roasted a little darker, with nuts and chocolate. Holds up in milk.

Ethiopia, Yirgacheffe. Arabica Heirloom, roasted lighter, with jasmine and flowers. At its best as filter coffee.

Brazil, Santos. Soft, low in acidity, with almond and milk chocolate. The one that almost always works.

Our green beans come through Daarnhouwer & Co in Zaandam, a trading house founded in 1908. All our beans are fairtrade and carry the Rainforest Alliance label.

Two minutes on foot from the Grote Markt. All three roasts are on the shelf in bags of 200 grams and 1 kilo, whole bean or ground.
